I love anything lemon. I have had some requests for lemon cakes and it made me remember lemon bread that a very dear lady I worked for at a wonderful kitchen store gave me. I used to make it for the store to sell, wrapped gaily in ribbon! A perfect accompaniment to afternoon tea, to give as a hostess gift, or an after school snack! Enjoy and remember this is not low fat!
Cream butter and sugar together. Add eggs and lemon zest. Mix dry ingredients and add alternately with milk to the creamed mixture.
Grease 8 small loaf pans. Distribute batter evenly between the pans. Bake at 325 degrees or until tester comes out clean--at least 20-25 minutes for smaller loaves.
Mix the 1 cup of sugar and the lemon juice together. With a fork or cake tester, poke holes in the warm bread. Pour juice mixture over the bread and let cool.
